Start With the Symptom
Write the defect in observable terms—where it appears, when it began and whether it follows a zone, recipe or material lot. “Not enough stable moisture and quality without surface scorching” is too broad to diagnose.
Work Through the Cause Chain
- Confirm material and incoming condition.
- Check presentation, distance and motion through the working zone.
- Verify the measurement method and sensor view.
- Inspect lamps, reflectors, conveyor, airflow and sanitation access.
- Change one variable and repeat the acceptance test. The result can shift with slice thickness, sugar, structure, loading and airflow, geometry, surface condition, distance, airflow, line speed and the way temperature or dose is measured. Stop Conditions
Stop the trial if guards, cooling, exhaust, interlocks or the approved operating envelope cannot be maintained. A food-heating application label does not establish hygienic design, cleanability or dehydration performance.
